Ingredients
- 890g packet frozen Birds Eye Air Baked Whiting
- 500g carrots, chopped
- 1 tablespoon honey
- 2 teaspoons ground cumin
- 400g can Edgell Brown Lentils, rinsed and drained
- ⅓ cup chopped fresh herbs (parsley and mint), plus extra leaves, for sprinkling
- Finely grated zest of 1 lemon
- 200g tub hummus
Method
STEP 1Place 8 pieces of frozen Birds Eye Air Baked Whiting on a baking paper lined tray.
STEP 2
Toss carrots with honey and cumin and place on a separate baking paper lined tray.
STEP 3
Cook fish and carrots in a preheated oven at 200°C for 20 minutes, turning halfway until fish and carrots are fully cooked.
STEP 4
Meanwhile, combine Edgell Lentils, herbs and lemon zest. Season to taste.
STEP 5
Divide hummus between serving plates, top with fish, carrots, lentils. Garnish with extra herbs. Serve.
