Whiting with Roasted Carrots & Lentils

Subtle Middle Eastern flavours of mint, lemon and cumin, pair beautifully with Birds Eye Air Baked Whiting.

Ingredients

  • 890g packet frozen Birds Eye Air Baked Whiting
  • 500g carrots, chopped
  • 1 tablespoon honey
  • 2 teaspoons ground cumin
  • 400g can Edgell Brown Lentils, rinsed and drained
  • ⅓ cup chopped fresh herbs (parsley and mint), plus extra leaves, for sprinkling
  • Finely grated zest of 1 lemon
  • 200g tub hummus

Method

STEP 1
Place 8 pieces of frozen Birds Eye Air Baked Whiting on a baking paper lined tray.
STEP 2
Toss carrots with honey and cumin and place on a separate baking paper lined tray.
STEP 3
Cook fish and carrots in a preheated oven at 200°C for 20 minutes, turning halfway until fish and carrots are fully cooked.
STEP 4
Meanwhile, combine Edgell Lentils, herbs and lemon zest. Season to taste.
STEP 5
Divide hummus between serving plates, top with fish, carrots, lentils. Garnish with extra herbs. Serve.
Tips
Substitute your favourite Birds Eye Air Baked Fish in this recipe.
