- 1 cup hummus
- 2 cups couscous, cooked following packet directions
- 2 cups baby rocket leaves
- 4 baby cucumbers, sliced
- 200g punnet mini roma tomatoes, halved
- ¾ cup pickled red onion slices
- Baby mint leaves, for garnish
Method
STEP 1Cook frozen Birds Eye Plant Based Patties following packet directions.
STEP 2
Meanwhile, spoon hummus and couscous into serving bowls. Fill with prepared salad ingredients.
STEP 3
Top salad with cooked plant based veggie patties, garnish with mint leaves and serve.
