Gold Miner's Pie

A simply delicious cottage pie idea, topped with your favourite gold nuggets - Bird's Eye Golden Crunch Potato Gems!

Ingredients

  • 1 tablespoon olive oil
  • 500g lean beef mince
  • 2 cups frozen Birds Eye Carrot, Peas & Corn
  • 2 cloves garlic, crushed
  • 400g can crushed tomatoes
  • 1 tablespoon dried mixed herbs
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon plain flour
  • 900g packet frozen Birds Eye Golden Crunch Potato Gems

Method

STEP 1
Heat oil in a large non stick frypan over medium-high heat. Add mince and cook for 5 minutes until browned.
STEP 2
Add frozen Birds Eye Vegetables, garlic, tomatoes, mixed herbs, Worcestershire sauce and flour. Cook for a further 5 minutes or until thickened and vegetables are softened.
STEP 3
Spoon mixture into a 1.5 litre capacity baking dish and top with frozen Birds Eye Potato Gems (approximately ½ bag).
STEP 4
Cook in a preheated oven at 220°C for 25-30 minutes or until gems are golden and crispy.
Tips
Beef mince mixture can be cooked a day in advance and stored in the refrigerator for easy meal prep.
