Farmhouse Frittata With Crispy Chorizo

What a great way to turn a side of veggies into a meal!

Ingredients

  • 1 chorizo sausage, sliced
  • 600g packet frozen Birds Eye Seasoned Sides - Farmhouse
  • 8 eggs, lightly beaten
  • Fresh basil leaves, for garnish

Method

STEP 1
In a large frypan cook chorizo for 1-2 minutes on either side until golden brown. Remove from pan and set aside. In the same pan, add the frozen Birds Eye Seasoned Sides and cook following packet directions for 5 minutes. Return chorizo to pan
STEP 2
Reduce heat to low and pour eggs over vegetables. Continue to cook for approximately 10 minutes or until egg is almost set.
STEP 3
Place pan under a hot grill to finish cooking the top surface. Stand for 2 minutes before cutting.
Tips
For extra flavour stir in 2 tablespoons sun dried tomato pesto when returning the chorizo to the pan.
