Ingredients
- 600g packet frozen Birds Eye Deli Chips –Golden Ale Beer Batter
- 2 tomatoes, deseeded and finely chopped
- 1 small red onion, finely chopped
- 1 tablespooon chopped fresh coriander, plus extra leaves, for garnish
- 1 avocado, lightly mashed
- Juice of 1 lime
- 1 spring onion, finely chopped
- 200ml light sour cream
- 10 pitted kalamata olives, halved
Method
STEP 1Cook frozen Birds Eye Deli Chips following packet directions.
STEP 2
Meanwhile, combine tomatoes, onion and coriander in a small bowl to make a salsa.
STEP 3
Combine avocado, lime juice and spring onions in a small bowl to make a guacamole.
STEP 4
Place cooked Birds Eye Deli Chips in a serving dish and top with fresh tomato salsa, guacamole, sour cream and olives. Garnish with coriander and serve.
Tips
For a quick shortcut, use a pre-prepared avocado dip.
