Ingredients
- 800g packet frozen Birds Eye Golden Crunch Hash Browns
- 1 tablespoon extra virgin olive oil
- 250g punnet trussed cherry tomatoes
- 2 cups baby spinach leaves
- 2 eggs, cooked sunny side up
- 4 rashers short cut bacon, cooked until crispy
- 1 small ripe avocado, mashed
- Fresh basil leaves and lemon wedges, for garnish
- Chilli flakes, for sprinkling
Method
STEP 1Cook desired amount of frozen Birds Eye Hash Browns following packet directions.
STEP 2
Meanwhile, heat oil in a large non stick frypan over medium heat. Cook tomatoes and spinach until tomatoes are blistered and spinach is wilted.
STEP 3
Serve hash browns with tomatoes, spinach, cooked eggs, cooked bacon and avocado. Garnish with basil and lemon wedges. Sprinkle with chilli flakes.
