Ingredients
- 250g packet frozen Birds Eye Ocean Selections Barramundi - Herb Salsa
- 1 mango, cut into chunks
- 1 Lebanese cucumber, thinly sliced
- ½ small red onion, thinly sliced
- 1 cup each small fresh mint and coriander leaves
- ¼ - ½ teaspoon red chilli flakes
- Finely grated zest ½ lime and juice of 1 lime
- ½ teaspoon fish sauce
- 2 teaspoons brown sugar
- Extra lime wedges, for serving
Method
STEP 1Cook frozen Birds Eye Barramundi following oven bake packet directions.
STEP 2
Meanwhile, gently toss together mango, cucumber, onion and herbs. Arrange on serving plates and sprinkle over chilli flakes to taste.
STEP 3
Combine lime zest, lime juice, fish sauce and brown sugar, drizzle over salad when ready to serve and top with cooked barramundi. Serve with lime wedges, if desired.
Tips
Use frozen mango if fresh mangoes are not in season.
