Air Baked Whiting Summer Salad

Fresh summer flavours of baby gem lettuce, snow peas, avocado and mango, tossed in a zesty lemon vinaigrette and topped with crunchy crumbed whiting and toasted macadamia nuts.

Ingredients

  • 380g packet frozen Birds Eye Air Baked Whiting
  • 3 cups baby gem lettuce, roughly torn
  • 1 cup snow peas, diagonally sliced
  • 2 tablespoons fresh dill fronds
  • 1 avocado, sliced
  • 1 mango, sliced
  • ¼ cup lemon vinaigrette dressing
  • ¼ cup toasted macadamia nuts, chopped

Method

STEP 1
Cook frozen Birds Eye Air Baked Whiting following packet directions.
STEP 2
Meanwhile, gently toss together lettuce, snow peas, dill, avocado and mango in a large bowl. Pour over dressing and gently mix to coat.
STEP 3
Serve salad topped with fish and sprinkled with macadamia nuts.
