Air Baked Dory with Cucumber Salad

A refreshing cucumber salad tossed in a yoghurt dressing, served with golden, crisp dory.

Ingredients

  • 380g packet frozen Birds Eye Air Baked Deep Sea Dory
  • 1 continental cucumber, thinly sliced
  • 3 celery sticks, sliced
  • ½ small red onion, thinly sliced
  • ¼ cup mint leaves, finely shredded, plus extra, for garnish
  • ½ cup Greek style yoghurt
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoon lemon juice
  • 1 clove garlic, crushed

Method

STEP 1
Cook frozen Birds Eye Air Baked Dory following packet directions.
STEP 2
Meanwhile, combine cucumber, celery, onion and mint in a bowl.
STEP 3
Whisk yoghurt, oil, lemon juice and garlic together until combined. Toss dressing through cucumber salad until fully coated.
STEP 4
Serve fish with cucumber salad, garnished with extra mint leaves.
