Glazed carrots are a wonderful accompaniment to roast dinners and chicken dishes.

- 500g packet frozen Birds Eye Carrot Rings
- ¼ cup red currant jelly
- 2 tablespoons orange juice
- 1 teaspoon balsamic vinegar
- Orange wedges and mint leaves for garnish
Cook frozen Birds Eye Carrot Rings following packet directions. Drain well and return to pan.
Add red currant jelly to carrots and allow to melt. Stir in orange juice and vinegar and toss gently until carrots are glazed. Serve with orange wedges and a sprinkle of mint leaves.
Orange marmalade can be substituted for the red currant jelly.
