Pork and crunchy vegetables tossed in a curry flavoured sauce.

Cook time: 7 mins
Serves: 4
Spray a non-stick frying pan with oil and heat, add curry, cinnamon and pork. Cook for 3 minutes stirring continually.
Stir in lime juice and rind, stock and frozen Birds Eye Country Harvest Vegetables. Cover and simmer for 4-5 minutes stirring occasionally.
Serve curry with steamed rice and garnish with cucumber.
Pork can be substituted with chicken.
