A super quick pasta dish for 2 to serve for lunch or a light dinner.

- 2 cups spiral pasta
- ½ cup frozen Birds Eye Baby Peas
- Grated rind of ½ lemon
- 1/3 cup light cream
- 1 tablespoon chopped fresh parsley
- 1/3 cup freshly grated parmesan cheese
Cook pasta in a pot of boiling water until tender, adding frozen Birds Eye Baby Peas for the last minute of cooking. Drain pasta and peas into a colander and return to hot saucepan.
Stir in lemon rind, cream and parsley and mix together. Serve pasta sprinkled with parmesan cheese.
Substitute parmesan cheese with pepato cheese for a peppery zing.
